Hi Guys,

Here is the receipe I said I would post. It is just in time for Thanksgiving, but I've fixed it even when it isn't Turkey day.

Butternut Squash Casserole

Serves: 6

1 butternut squash, cooked and pureed
3 large eggs OR 3/4 cup Egg Beaters
2 cups low fat milk
1/4 cup brown sugar or do a combination of Splenda and brown sugar
1/2 cup cake flour*
1 tablespoon margarine, melted or "Pam" Spray
1 dash cinnamon OR pumpkin pie seasoning

Place ingredients in bowl in order: squash, eggs, milk, sugar,flour and cinnamon.
Beat with electric mixer till well blended.
You can "Pam" a 1 1/2 qt casserole dish, but use a glass dish.
Bake in oven at 350 degrees for about 1 1/4 hours until "set". You can stick a knife in the middle and it should come out clean.

*If you don't have cake flour, just add a little less flour when you use regular flour.

Jean, Did you recieve your TOPS magazine yet?? If so check out the article in there about casserole reciepies wanted for future magizine. I think this should be sent in. Havent tried it yet BUT sounds yummy...... Good Luck Rita
